Abstract

The purpose of this research was to study the effect of storage temperatures ( 5 10 15 20 and 25 C ) on quality of mud crabs during emersion storage for 1-5 days. The results showed that the chilled live mud crabs stored at 15-25C for 5 days had the best survival rates of 100 %. The chilled storage at low temperature had lower drip loss than at the high temperature. The results of TVB, TMA and NH3 showed that the chilled live mud crabs stored at 25 C for 1 day and 3 days had the lowest TVB 0.85 mgN/100g, TMA 0.22 mgN/100g for 1 day and NH3 0.13 mgN/100g for 2 days at 20C. The proximate analysis of the chilled live mud crabs stored at 15-25C for 5 days showed 77.2-80.1 % moisture, 0.20-0.27 % fat, 16.07-16.66 % protein and 0.19-1.94 % ash. The results indicated that the chilling storage effected quality of live mud crabs was acceptable at 1525C before 3 days of storage time.
