Abstract

Lentinan (C6H1PJn is a long chain branched polysaccharide of shiitake mushroom (Letltinus edodes). Its primary structure is a f3-1,3,-D-glucan having 2-f3-1,6 glucopyranoside branchings for every 5 f3-1, 3 linear linkages. Lentinan has been clinically applied as an antitumor and antimetastatic drug, and has been reported to prevent both chemical and viral carcinogenesis. It is known that lentinan affects the tumorous vascular system resulting in the induction of hemorrhagic necrosis which is dependent on T-cells in the tumor. Lentinan produced by extraction of fruiting body of shiitake mushroom. Recently has been developed production of lentinan through liquid fermentation in a bioreactor. In this experiment was studied the effect of woctd extract on the production of extracellular lentinan in a liquid fermentation. Four isolates of Lent in us edodes were used in this experiment (S1 k; S1 m, Le2 k; and Le2 m). Liquid fermentation was conducted for a week in a room temperature. Result showed that wood extract addition in liquid medium promote the production of lentinan of all isolates. The best lentinan producing isolate is S1 k in the liquid medium containing wood extract.
