The present study aimed to assess the optimization andcharacterization of endopolysaccharides from Pleurotus eryngii. Theresults of optimization of culture conditions showed that the highestgrowth and maximum production of endopolysaccharides ofPleurotus eryngii were achieved with using potato glucose medium,at 12 days incubation period, at temperature 30°C and with usinginoculum size three discs (1cm in diameter for each) of Pleurotuseryngii. High performance liquid chromatography analysis detectedthat endopolysaccharides extracted from Pleurotus eryngii wascomposed of β-glucans, Chitin, Galactans and Mannans atconcentration 36.20, 22.60, 21.60 and 19.60% respectively.Endopolysaccharides extracted from Pleurotus eryngii showedantioxidant activity.
