Abstract
In this bachelor thesis the chemical characteristics of three different cabbage In this final paper, the chemical characteristics of three cabbage samples were examined (white cabbage, Brassica oleracea L. var. capitata f. alba, red cabbage, Brassica oleracea L. var. capitata f. rubra, kale, Brassica oleracea L. var. sabauda) which belong to the Brassicaceae family. The concentrations of the selected heavy metals in the samples were determined by atomic absorption spectrometry. The lowest quantificated concentrations of selected heavy metals were measured for cadmium, the concentration of which reached the highest value in the kale sample (0.19 mg kg -1 ) but did not exceed the toxicity limit of cadmium in the plant (> 3 mg kg -1 ). The highest concentrations of the selected heavy metals were quantificated for iron, the concentration of which reached the highest value in the kale sample (50.715 mg kg -1 ), which is within the corresponding values required by the plants for normal growth and development, and they are 50-300 mg kg -1 .
