Abstract

This chapter presents the scope and potentiality of Mid-infrared spectroscopy (MIRS) for food analysis. MIRS has a great potential to detect various components of food, and this technique holds great significance as it provides specific fingerprints for different food products. Mid-infrared range has an appropriate band in the spectrum for quantitative analysis of a required component in a solution. The quantitative analysis of the solid samples is usually considered to be more liable to errors because of the radiation dispersion. In many food processing plants, MIRS is being utilized to promote the utilization of infrared radiations for in-process detection of food quality. Mid-infrared qualitative analysis is additionally used to determine milk elements like fat, protein, milk sugar and total solids. Beverage quality maintenance team regularly executes a series of compositional analysis on post-produced beverages to ensure the quality or lawfully specifications of products.
