Abstract
Papain is a protease enzyme contained in papaya latex. Papain was immobilized on chitosan by using cross-linking method with calcium matrix. Immobile papain that comes from papain immobilization used chitosan-Ca matric, its activity is tested to be compared with the free papain. Variable that use is pH and temperature. The result of the study shows an optimum activity of immobile papain at pH 8 and optimum temperature at 60°C. While the activity of free papain at pH 8 and optimum temperature at 50°C, the immobile papain can be used for 2 times and free papain just once time.
