Abstract

172 Electroanalytical techniques have great perspectives for its application in quality control in the food industry. The determination of the anodic potential of two or more substances in a single sample is a fast, convenient, and low-cost alternative to traditional techniques. Even more can be an identification parameter to be used to determine total antioxidant potential in foodstuff samples. The developed system basically consist of a platinum electrode1 for electrochemical identification of gallic acid in the presence of ascorbic acid at different pH values.
