Abstract

The oil has a high concentration of terpinen-4-ol, a constituent to which antimicrobial activity is related. The composition of the essential oil used in the research, as well as the composition of the meat, may justify the results obtained in the study. The technical reports were obtained from Ferquima, from which the oil was obtained. These reports show the composition of the main constituents of the oil used in the research. It was not possible to inhibit the growth of suspensions 1.5 x 108 CFU / mL, which may be related to the interaction between the oil and the food matrix.
