The changes in microorganisms and εnzyme activity during the fermεntation of soybean paste(Doenjang) at various salt contents (8-14%) were invεstigated to develop a low salt soybean paste.The initial microbial counts were in thε range of 2x 1 0 6 CFU/g for aerobic bacteria, 1 x 1 0 5 CFU/g for yεasts , and 6x 10 4 CFUlg for molds regardless of the salt contents.Thε aerobic bacteria increased to 10 7 CFU/g after 3 week fermentation and then decreasεd to 10 5 x 10 6 CFU/g 1εvεls aftεr 7 weeks and remainεd constant afterward.The yεasts also incrεasεd in the first 3 week fìεrmentation and dεcreased aftεrward.The yeasts showed highεr populations at lower salt contents.The mold counts decreased with fermentation time and showed lower values at lower salt contents.Thε protease activity was the highεst after 7-10 week fìεrmentation and was higher at lower salt contents.Thε a-amylasε activity decreased slightly with fermentation time 써lilε the ß-amylasε activity incrεased rapidly after 3 week fermentation and startεd to decrease afterward.Both a-amylase and ß-amylasε showed higher activities in low salt containing soybean pastεs.
