Abstract
Biogenic amines are class of compounds produced by decarboxylation ofcertain aminoacids in food products. This decarboxylation is mostlycatalyzed by microbial activity of food spoilage microorganisms. Theaim of the study was to determine the presence of biogenic amines, such as (tyramine, histamine, putrescine, cadaverine, spermidine and spermine) bacteria isolated from poultry viascreening method and ion exchange chromatography.
