Abstract

The application of the agar gel diffusion techniques to the identincation of meats from sheep, cattle and horses is descriptionbed and details of the precipitin reaction lines obtained are provided and illustrated with photographic plates. Successful application of the technique to biltong (air-dried salted strips of meat) is descriptionbed.
