Abstract
India is currently the largest producer of cane sugar in the world accounting for 10 per cent of the world production. Juice of sugarcane ( Saccharum officinarum ) and sugar beet ( Beta vulgaris ) are rich in pure sucrose, although beet sugar is generally much less sweeter than cane sugar.
