Abstract

Determined the concentration of protein in Chenopodium quinoa Willd acquired in the market district Curgos - Huamachuco and Chenopodium quinoa Willd var. Real Quinoa acquired from the National Agricultural Research Institute. This sample was divided into three groups of experimentation: Chenopodium quinoa Willd var. Sayana, Chenopodium quinoa Willd var. Witulla and Chenopodium quinoa Willd var. Real. Each sample was converted to flour, then determined the percentage of moisture and microkjeldahl method was applied to quantify the amount of protein. The amount of protein determined in 100 grams of sample from each experimental group: Chenopodium quinoa Willd var. Sayana, Chenopodium quinoa Willd var. Witulla and Chenopodium quinoa Willd var. was: 13.3638, 15.3031 and 10.9414 g, respectively for each group of experimentation. Obtaining the highest concentration of proteins in Chenopodium quinoa Willd var. Witulla (p <0.05).
