Abstract

Bacterial species which have been isolated on the surfaces of mould and smear ripened Italian cheeses, have been described. They are Staphylococcus spp., Micrococcus spp., Kocuria spp., Corynebacterium spp., Microbacterium spp., Arthrobacter spp, and Rhodococcus spp.
