Abstract
The objectives were to observe whether glucose, maltose, and maltotriose have effects on water mobility similar to those of sucrose ; and to determine, by comparing glucose, maltose, and maltotriose, whether any factor can be isolated that causes changes of water mobility in wheat starch-sugar-water model systems as temperature is increased from 35 to 87°C
