Abstract
The paper discusses about the structure, size and influence of Indian sugar industry on world sugar market and presents an overall view of the sugar industry and its socio-economic impact. Paper highlights the Indian sugar industry scenario, technology issues, efficiency improvements, by-product usage and environmental safeguards addressed by the Indian sugar mills. The authors also present the engineering and institutional support available for its sustainable growth.
