Abstract
Effect of solid-liquid ratio, temperature and time on the extraction efficiency of hemp seed protein with different extraction pH was researched. The result showed that influence trend of three factors with extraction pH 9.5 and 11 were same, while the extraction yield of pH 11 were greater than 9.5 for all factors. The orthogonal experiment was used to analyze the protein extraction, found that the extraction yield of pH=9.5 was less than pH=11, while the quality of protein was better. Then, the method of secondary extraction was used to get the highest extraction yield at 85.97%, and protein quality was best, adopting the optimal extraction process of pH=9.5 and 11 successively.
