Abstract

By a single factor test,the influences factors of extracting isofiavones from fermented soybean meal were studied.The optimum conditions determined by an orthogonal test are as following:ethanol 70%,the ratio of sample and extraction solvent 1∶5(W/V) ,temperature 70℃,duration 3 h,and the extraction rate of isoflavones under the conditions is 0.522%.
