Abstract
In this study, a high-temperature resistant yeast strain Y3was isolated from stacking fermented grains of Jiangxiang liquor. Through morphological observation, physiological and biochemical identification and molecular identification test, strain Y3was preliminarily identified as Pichia kudriavzevii strain.
