Abstract
The insoluble dietary fiber was extracted from peanut shell by acid-base method.The main factors affecting the extraction efficiency were optimized and analyzed by response surface methodology.The result showed that the optimal extraction conditions were as follows: 40 mesh of particle size,solid to acid detergent ratio of 1∶25,extraction time 3 h,extraction temperature 70℃.The extraction yield was 75.8% under the optimal conditions.The water-holding capacity and expansion force of the obtained insoluble dietary fiber were 399.15% and 3.20 mL/g,respectively.
