Abstract

In the solution of NaAc HAc (pH=3.6) and sulfite oxidase, sulfite can be oxidized to form SO 4 2- and H 2O 2 , and then colored by horseradish peroxidase and 3,3′,5′5′ tetramethylbezidine (TMB). The enzymatic method was used for measuring sulfite in the food with the linear range 0.15~20μg/mL at 650nm.
