Abstract
Sweeteners is the non-saccharide substance which has sweet taste and can make food sweet. More than 20 sweeteners are widely applied in the world at present,China has approved the use of about 15. Non-nutritive sweeteners is the substance that have the same sweetness with sugar while its calorific value is lower than 2% of the sugar. According to their nutritional value,several non-nutrient sweeteners in food industry,such as sweeteners,sodium saccharin,acesulfame-K,aspartame and cyclamate were introduced. The performance,preparation,application and the new research advancements of the safety of these sweeteners were summarized in this paper,to give some reference to the people to choose more appropriate sweeteners.
