NUTRITIONAL VALUE EVALUATION OF THE PROTEIN IN PHOLIOTA ADIPOSA MYCELIA

Abstract

The crude protein and amino acids of Pholiota adiposa mycelia were detected. The international adopted nutrient value assessment method was applied to the overall assessment of the protein nutrient value of Pholiota adiposa mycelia. The result was compared with the protein nutrient value of Pleurotus nebrodensis , Pleurotus eryngii and Pleurotus citrinopileatus. The assessing result showed that the total essential amino acid in Pholiota adiposa mycelia was the highest, making up 43.9% of the total amino acids. The amino acid score (AAS), chemical score (CS), essential amino acid index (EAAI), biological value (BV), nutritional index (NI) and score of ratio coefficient of amino acid (SRCAA) of its protein were 92.0, 71.3, 88.5, 84.8, 40.4 and 78.8 respectively. The six indexes of Pholiota adiposa mycelia were higher than those of Pleurotus nebrodensis , Pleurotus eryngii and Pleurotus citrinopileatus. The results showed that the protein nutrient value of Pholiota adiposa mycelia was very high.
