Abstract
Ethanol subsiding method was adopted to extract protein from Pueraria lobata leaves.Single factor and orthogonal test combined with Kjeldahl method was used to optimize the extracting conditions including extraction temperature,extraction time,solution pH,and liquid to solid ratio.The results showed that the optimum conditions of protein extraction from leaves of Pueraria lobata were extraction temperature,90 ℃;extraction time,120 min;solution pH,6;and liquid to solid ratio, 1.4∶1(V/W,L:kg).
