Abstract
The Alisma orienta(lSam)Juzep. starch was used as material in the experiments to study the effects of autoclaving and enzyme treatment for resistant starch making. After autoclaving, the thermostable α-amylase and pullulanase were added into the paste, so that there were more amyloses produced and it is easy to reform new crystal.At the same time the content of resistant starch was increased. The experiment showed: the maximum content of resistant starch was obtained when the material was autoclaved at 120 ℃ for 50 min, the amount of thermostable α -amylase was 6 U/g starch for 30 min, and the pullulanase was added 4 PUN/g starch which maintained at temperature of 55 ℃ for 12 hours. And the Orthogonal experiment showed that most important influence was the reactive time of pulluanase.
