Abstract
Zingiber Officinale Roscoe is utilized for spice and perfume production. The contents of Guizhou essential oils and pungent compounds were determined in the study and the results indicated that Guizhou ginger contains 072% of essential oil and 285% of pungent compounds. The chemical compositions of the essential oils were analyzed by Gas ChromatographElectro Spray Mass Spectrometeric analysis. The compounds are listed below: βZingiberene (2551%), βThujene (1752%), Farnesene (1062%), Camphene (10 59%), Sesquiphellandrene (10 39%), α Curcumene (5 39%), α Pinene (4 97%), 6 Methyl 5 heptene2 one (2 28%), Borneol (1 23%), α Thujene (1 14%), Linalool (0 67%), β Pinene (057%) and the micro constitutents. Ginger essential oils and ginger gingerols are two main products from deep processing of ginger, which have high application value and development potentials in foodstuff industry and industrial medicine. This paper also reviews their components, properties, functions, extractions, applying properties, certain experimental results, research progress and developments about ginger healthy food and medicine preparations.
