Abstract
In order to find out the impacts of five plastic packaging materials with different gas permeabilities on beef quality in the modified atmosphere package(MAP),the raw beef was packaged in the MAP(45% O2∶30% CO2∶25% N2) and stored at 4±1℃,the gas concentration in package,total number of colonies in beef,TVB-N value,lipid oxidation(TBARS),content of metMb(metMb%),tenderness and elasticity were determined and analyzed every two days.The results demonstrated that the PE/PP/PET composite film has the best fresh-keeping effect,whose shelf life of beef could keep to over 16 days,and it was superior to PA/PP/PET composite film and aluminum foil bag,the PE/PP composite film was not suitable for beef preservation.
