Abstract

This study aimed to find out the optimum extraction conditions of yellow pigment of ambary by a single factor orthogonal experiment,the optimum extraction conditions were 55℃,1:40 of material to acetone(g/ml) and 6 h.The effects of some influential factors including temperature,pH,light,oxidant,Vc and metallic ions on the stability of the yellow pigment were also experimented.The results showed that the yellow pigment had a good stability below 90℃ or under a strong acid condition,pH had a significant effect on its stability,the yellow pigment also had a good resistance to Vc and a certain resistance to oxidant.The metallic ions such as Ca2+、Mg2+ had little effect on the yellow pigment,but these metallic ions such as Cu2+、Al3+、Na+、K+ could,in some extent,degrade the yellow pigment.
