Abstract
The influences of different drying methods,including hot-air drying,vacuum drying,microwave drying and vacuum-freeze drying,on the yield of formaldehyde in the Lentinus edodes,rehydration and sensory evolution of Lentinus edodes were investigated. The results showed that the yield of formaldehyde in the Lentinus edodes,rehydration and sensory evolution of lentinus edodes were significantly affected by different drying methods(p0.05). The vacuum-freeze drying is the best method,under this condition can obtain the best character such as the lowest yield of formaldehyde(38.26 mg/kg),the highest rehydration(8.58) and the highest sensory evolution(92.7). Choose the best method is vacuum-freeze drying through measure a series of character.
