Abstract
The carbon source of MRS culture medium was replaced by different proportion of soybean oligosaccharides. The OD600nm, pH and lactic acid production were detected at different time points after Lactobacillus plantarum cultured in vitro. The results showed that, after 24 h cultivation, the OD600nm showed 1.78, pH value was 4.32, lactic acid production was 66.53 mmol · L- 1when soybean oligosaccharide was added in MRS culture medium by 3%. The typical growth curve could be formed at 3% supplementation proportion. And antimicrobial properties of Lactobacillus plantarum had not been affected by soybean oligosaccharide supplementation. Therefore, soybean oligosaccharides signifi- cantly promoted Lactobacillus plantarum multiplication, and could be considered to explore symbiotic combined with Lactobacillus plantarum.
