Abstract
In this paper, the crude resveratrol from wine grape pomace using methanol extraction was purified by silica gel column chromatography. Then, the antioxidant activity of resveratrol was investigated, including oxygen radical(·O2)scavenging capacity, superoxide anion radical(O2-·)scavenging capacity, hydroxyl radical(·OH)scavenging capacity and 2,2-diphenyl-1-picrylhydrazyl(DPPH) radical scavenging capacity. The results indicated that resveratrol had significant scavenging and antioxidant activity and those antioxidant properties of resveratrol depended on concentration and increased with the increasing concentration of sample.
