Abstract
The antifreeze protein is also defined as thermal hysteresis protein which can protect organisms from injury caused by freezing. The antifreeze activiy is shown as thermal hysteresis acivity and recrystalization inhabition effect. In this article, some factors which affect the antifreeze activity are discussed, meanwhile, methods to measure the thermal hysteresis activity and recrystalization inhabition effect quantificationally are introduced.
