Relationship between Vitamin C Accumulation and Synthase or Oxidase Activities of Rubis idaeus Fruit

Abstract

The ascorbic acid(AsA),Dehydroascorbic acid(DHA) and total vitamin C content of four raspberry(Rubus idaeus) varieties were tested during fruit development;and enzyme activities of L-galactono-1,4-lactone dehydrogenase(GalLDH),ascorbic acid oxidase(AAO) and ascorbate peroxidase(APX) were also measured.The result showed that the content of AsA and vitamin C continually accumulated with the fruit development.GalLDH activity was highly significant positive correlated to ASA accumulation in the four varieties.AAO and APX activity had no significant correlation to AsA;but APX activity was significantly positively correlated to DHA content,which indicated that the difference of vitamin C content in raspberry varieties was related to GalLDH and APX activity.
