Abstract

There was the highest yield of EPS when seed volume was 2%, fermentation temperature was 38℃, fermentation time was 2.5h, after studying the production condition during the process of producing yoghurt. In the meantime, we also discovered that 4 kinds of fruit juice ,such as tomato juice, were not only the growth-promoting substances for lactic acid bacteria, but also the yield-raising factors for EPS after researching the fruit juice抯 effects on the yield of EPS.
