Abstract
The capsaicin was extracted from Capsicum as material which was dissolved by sodium hydroxide and whose pH was adjusted hydrochloric acid. All the technology affect factors of distilling condition were made a systematic study. The orthogonal tests were done in order to get the optimum process of extracting process. The experiment's result indicated that: sodium hydroxide quality percent was 20 %,dosage of sodium hydroxide was 150 mL,Soaking time was 3 h,dip temperature was 60 ℃.12.942 2 mg capsaicin was obtained from 15.000 0 g capsicum under this optimum condition.
