Effect of Washing Operation on the Gel Strength of Dosidicus gigas Surimi

Abstract

The effect of washing operation on the gel strength of Dosidicus gigas surimi was investigated by testing the gel strength of the surimi gels.The results showed that,with the addition of Ca2+ into the washings,the gel strength of the surimi increased first and decreased afterwards.The gel strength of the surimi gels got optimal values when 4.5 mmol/L CaCl2 or 2.25 mmol/L lact-Ca,and the effect of adding lact-Ca on gel strength was better than that of adding CaCl2.The change of gel stength took the same tendency with the addition of sodium citrate into the washings,and the gel strength got maximum when added 0.2 % sodium citrate.The results also showed that,the better washing conditions of Dosidicus gigas surimi was washing surimi three times with pure water,when the temperature of washings was 16 ℃ and the pH was around 7.The optimization washing conditions of Dosidicus gigas surimi was washing by clear water once,0.2 % sodium citrate twice and 0.1 % CaCl2 once.
