Abstract
Properties of xylanases were studied by the method of DNS.The results showed that the optimal temperature and optimal pH of the xylanase was 50 ℃ and 6,respectively.Xylanase activity was stable between pH5 and pH10,and the themal stability of the enzyme was good in lipid below 60 ℃.The Km values and Vmax of xylanase for xylan from oat spelts under 50 ℃,pH6 were 6.49 mg/mL and 21.05 μg/(mL·min),respectively.The xylanase had the highest activity when xylan from oat spelts was used as the substrate.The enzyme activity was inhibited in stomach and restored in small intestine.
