Abstract

Three strains with better fermentation performance were screened from 35 strains of Saccharomyces cerevisiae that were isolated from rotten oranges. Strain F16, which showed best in fermentation performance and orange wine quality, can be used as the fermentation strain of orange wine or the original strain for orange wine special strain breeding.
