Abstract
Through the research on the factors that may affect the stability of black rice pigment, the results showed that, in the acidic environment, below temperature 40 ℃, Na+, Mg2+, Ca2+, Zn2+environment, reducing agent, low concentration of preservatives, indoor natural light or dark environment, the black rice pigment has better stability;on the contrary, in alkaline environment, relatively long time high temperature, Fe3+, oxidant,high concentration of preservatives, sunlight or ultraviolet are not conducive to the stability of black rice pigment.
