Abstract

Extraction conditions of pigment in pitaya peel,such as the extracton agent proportions of water and ethanol mixture,ultrasonic extraction time and weight of the peel were investigated.The maximum absorption wavelength of the pigment is 538nm.It can exist stable for a while before oxidized,and the maximum absorption wavelength of oxidation product is 390nnm.The coexistence of the pigment in pitaya peel with food additives was also determined.
