Abstract
samples of Acidic-Gruel were collected from families Hetao Area in Inner Mongolia. Lactic Acid Bacteria was isolated and their biological properties were studied 10 strains of Lactic Acid Bacteria were isolated,8 strains belong to Lactobacillus and 2 strains belong to Enterococcus. The bacteria of Lactobacillus are the most widely dispersed bacteria in the Acidic-Gruel. The isolated Lactic Acid Bacteria were medium temperature bacteria. They can produce acid and aromatic substance well.
