Abstract
In this research, the four factors: selenium concentrations, quantity of inoculation, incubation times and volumes of medium, which influence the Se content in selenium-enriched yeast prepared by Saccharemyces cerevisiae, were studied. The results showed that selenium concentrations have a great influence on selenium rich ability and the selenium concentrations, quantity of inoculation, incubation times and volumes of medium were determined as: 20 mg/L, 5 %, 20 h and 60 mL /250 mL, respectively. Under the initial optimized conditions, the Se content and the total Se content of selenium-enriched yeast reached 920.3μg/g and 4 038.7μg/L respectively.
