Abstract
Objective:The antioxidant activity of anthovyaninis from sugarcane skin was evaluated.Method:Antioxidant activities were studied by determining the antioxidant activity on lipid peroxidation,free radical scavenging activity on DPPH·,·OH,O2-·.Results:The anthovyaninis from sugarcane skin had excellent antioxidant activity on lipid peroxidant,and scavenging effects on DPPH·,·OH,O2-·.The anthocyanin from sugarcane skin has better lipid peroxidation inhibition ability than ascorbic acids,but worse than ascorbic acids on scavenging O2-·.The scavenging effects on DPPH· and ·OH were almost the same with ascorbic acids at low concentration but better than ascorbic acids at high concentration.Conclusion:The results suggested that the anthovyaninis of sugarcane skin has antioxidant activities and broad application prospects.
