Abstract
Bacillus subtilis lipase(BSL2) was used to catalyze the synthesis of ethyl butyrate in organic solvents.The effects of reaction conditions such as reaction temperature,concentration of substrate,molar ratio of substrate,reaction medium,initial water activity and others on the synthesis of ethyl butyrate catalyzed by lipase were investigated to obtain the optimum reaction conditions.The findings show that percent conversion of synthesis of ethyl butyrate reaches 94.8% under the optimum conditions of using n-hexane as solution,0.33 of initial water activity,with 100 mg lipase and 40 mM concentration of butyric acid,1∶1.5 of molar ratio of substrate,at the temperature of 40 ℃ after 30 h oscillatory reaction.
