Abstract

The optimization of conditions for simultaneous extraction of pigment and capsaicin from Capsicum frutescens L.with ethanol as solvent were studied.Some factors,such as the ethanol mass fraction,the ratio of extracted material to solvent,the temperature and time,were studied with orthogonal method.Results showed the successive order of factors affecting extraction of pigment was ethanol mass fractionsolid-liquid ratioextraction temperature extraction time,and the successive order of factors affecting extraction of capsaicin was solid-liquid ratioextraction time extraction temperature ethanol mass fraction.Finally,by studying the single factor of extraction times,the optimum conditions for the extraction of pigment and capsaicin were determined to be 95% ethanol at 50℃ in 1 hour and the solid to liquid ratio 1∶11 for 3 times.
