Abstract

Characteristics and advances of resistant starch are discussed.It also includes classification and detective methods of resistant starch.There are three kinds of starch (Ready digestible starch,RDS;Slowly digestible starch,SDS and Resistant starch,RS)in foods.Some factors that affect the content of resistant strach are showed.The connection between resistant starch and dietary fiber is studied.The sensory characteristics of foods that have resistant starch should be improved.The application of resistant starch has a rosy future.
