Effects of PUT and SPD on Capsaicin and Its Metabolism-related Substances in Pepper Fruit

Abstract

Shenjiao 4 pepper was planted in greenhouse.Different concentrations of putrescine(PUT),spermidine(SPD) and spermine(SPM) were sprayed on pepper plants in the flowering period.The change of capsaicin content and its metabolism-related substances in pepper placenta were studied during the growing period.The results indicated that both PUT0.1 and SPD1 promoted capsaicin accumulation,the PUT0.1 was the most effective.These two levels of polyamines can both promote the activity of phenylalanine ammonia lyase(PAL) and peroxidase(POD).PUT0.1 reduced the polyphenoloxidase(PPO) activity and suppress the lignin accumulation.All polyamine treatments can promote the accumulation of flavonoids and tannin.But the PUT0.1 promoted tannin accumulation more effectively,while flavonoids less effectively.The study showed that PUT0.1 was the best treatment in promoting capsaicin accumulation.
