Abstract
[Objective]The aim was to research the impact of factors of enzymatic hydrolysis for glueosinolate in broccolini seeds,determine the optimum conditions of enzymatic hydrolysis and identify the enzymatic hydrolysis products.[Methods] Take the broccolini seeds powder as the material,the impact of the different temperatures,pH value and time respectively was analysed and the enzymatic hydrolysis products were identified by GC-MS.[Result]The results showed that the optimum enzymatic hydrolysis conditions for the glucosinolate were time 8 h,temperature 25 ℃,ph 7.0 and five compounds were identified from the enzymatic hydrolysis products of the glucosinolate by GC-MS and they accounted for 80% of the whole volatile products.[Conclusion] This paper identified the optimum conditions of the enzymatic hydrolysis for glucosinolate in broccolini seeds and provided the theoretical basis of broccolini seeds for anticancer activity.
