Abstract
Using sweet sorghum stalk as material in solid-state fermentation, the fermentation temperature,pH and inoculum volume of three yeast strains were compared. The results showed that strain No.1 performed best in fermentation. The optimal fermentation conditions for No.1 strain were: the temperature 36 ℃,pH 5.0,inoculum volume 1.0 ml/g,and fermentation time 24 h.
