Abstract
Soybean meals were fermented in the present study by using equol-producing bacterium ZX-7 which was isolated from porcine feces and able to degrade daidzin into daidzein and equol.Through the single factor test and orthogonal test,the optimum extracting conditions were obtained to extract daidzein and equol from the fermented soybean meals.
